Wanna know the easiest carob fudge recipe ever? Um, well it's right here. No heating involved and oh, it's vegan too. Takes about five minutes to make and tastes really, really good. I highly recommend this recipe for those of you that are busy, for those of you that are looking to impress a certain someone with something sweet...did I mention it was easy? It is. Very. People will be impressed.
I made this the other night as a surprise for my husband. He was impressed and happy and had to stop himself from eating too much. I got mad wifey points.
I've been wanting to make this recipe for quite awhile. I got the idea from one of my favorite yoga teachers, Tiffany Cruikshank. It was in her book Optimal Health , except, every single time I wanted to make it, I was missing one or more of the ingredients. It called for soaked raw almonds, I had none. It called for vanilla, I forgot to buy it at the store that day.
So I decided to experiment as I often do and just figure it out on my own and see if something worked. Well, it did. Here we go...
Ingredients:
- 1 cup of carob powder
- 4 organic dried apricots
- 1/2 cup of organic peanut butter
- 1/3 organic raw coconut oil
- organic almond milk
Directions:
- Let the apricots soak in water for about 30 minutes, afterwards chop up.
- Add apricots, peanut butter, coconut oil and carob powder to blender.
- Start blending, then drizzle in almond milk while blending until the consistency is that of a super thick cake batter.
- Spoon out of the blender into a small pan or in my case, I used a ceramic container with a glass lid. Pat the mixture down into the pan or container with your hands so that it's about 1 inch thick.
- Put in refrigerator to cool and form for about one to two hours.
Side note: I keep mine in the refrigerator even after it's done cooling. If you make this for a party, it seems to be okay to leave out for about three to four hours before it starts to lose it's perky shape.
In case you are curious, I used the Vitamix Professional Series 200 to make this fudge. In fact I use it for all my smoothies these days and whatever other strange concoctions I decide to make. I've gone through my fair share of cheap drugstore blenders throughout the years that have ended up failing on me time and time again to my frustration. Lesson learned. I seriously use this blender every day, it's my favorite!

Hi Connie, yes! No additional sugar and honey. The carob powder and apricots have naturally occurring sugar and it still tastes plenty sweet.
